Stir It Up - Mexican

Pico de Gallo 

6 Roma tomatoes, seeded and chopped

2 tablespoons snipped fresh cilantro

1 small red onion, finely chopped

2 jalapeno peppers, seeded and chopped

1 clove garlic, minced

1 teaspoon sugar

2 tablespoons fresh lime juice

Salt to taste

 In a medium-mixing bowl, combine all of the ingredients.  Let flavors blend in the refrigerator.  Use gloves to cut up peppers so that you don't burn your hands. 

 

Tex-Mex Pizza

1 pizza crust

1 15 - ounce can black beans, rinsed and drained

2 tablespoons snipped fresh cilantro

2 tablespoons salsa

1 teaspoon ground cumin

1/2 teaspoon hot pepper sauce

2 cloves garlic, minced

2 cups shredded Mexican blend cheese

1/2 cup chopped red pepper

1/4 cup sliced green onion

Garnish with sour cream and salsa

Lightly grease an 11- to 13-inch pizza pan. Place pizza crust on the prepared pan and bake in a 425-degree oven for 7 to 10 minutes or until lightly browned.  In a blender or food processor combine black beans, cilantro, 2 tablespoons salsa, cumin, hot pepper sauce, and garlic.  Process mixture until smooth.   Spread bean mixture over hot crust. Sprinkle with cheese, chopped red pepper, and green onion. Bake about 10 minutes more or until cheese melts and pizza is heated through.  Serve with sour cream and salsa.

 

Southwest Mac and Cheese 

12 ounces rigatoni pasta (3 cups)

1 pound bulk pork sausage

1 cup chopped sweet onion

1 16 - ounce jar green medium-hot salsa

4 cups shredded Monterey Jack cheese

4 tablespoons butter

1/2 cup milk

Chopped fresh tomatoes, sliced jalapeno peppers, and chopped fresh cilantro

Salsa

Preheat oven to 350 degrees.  Lightly grease 3-quart baking dish. Cook pasta according to package directions.  While still warm, mix the butter and milk into the pasta.  In a large skillet cook sausage and onion until meat is browned and onion is tender.   Drain excess fat and stir green salsa into the cooked sausage.  In prepared baking dish layer half of the cooked pasta, half the sausage mixture, and half the cheese. Repeat layers. Bake, uncovered, for 35 minutes or until bubbly. Let stand 10 minutes. Right before serving top Mac and cheese with tomatoes, jalapenos, and cilantro.   Serve with additional salsa.
