Great Groceries: Bacon Fried Rice

Bacon Fried Rice

2 cups long grained rice, preferably jasmine

1 1/2 cups water

8 strips of bacon, into 1-inch pieces

5 Tbsp. canola oil, divided

1 large onion, chopped

5 green onions, thinly sliced and divided

2 cloves garlic, minced

1 (10 oz.) package frozen peas, thawed

5 large eggs lightly beaten

2 tsp. sesame oil

1/2 tsp. salt

1/4 tsp. freshly ground black pepper

In a medium saucepan, cover rice with water; stir with a wooden spoon until the water becomes cloudy, then drain the rice through a fine-mesh strainer. Return rice to saucepan and add 1 1/2 cups of water, cover and cook over medium-low heat until the water has been absorbed and the rice is cooked, about 22 minutes. Remove from heat and set aside for 10 minutes to finish cooking, then fluff with a fork.

Meanwhile, in a large, deep skillet, cook bacon over medium heat, stirring occasionally, until crisp. Drain on a paper towel-lined plate and discard the bacon fat.

In the same skillet, add 2 Tbsp. canola oil, onion and 4 chopped green onions and cook for 2 minutes. Add garlic, 1 Tbsp. canola oil and cooked rice and stir to coat. Add the peas and stir again. Make a large well in the rice and add remaining 2 Tbsp. canola oil and eggs. Let the eggs set for 1 to 2 minutes, then scramble them with a fork and cook for 2 minutes more. Stir eggs into the rice, breaking them up into small pieces. Turn off the heat.

Add the bacon, 1 chopped green onion and the sesame oil and stir. Season to taste with salt and pepper. Serve immediately.
