Great Groceries: Tilapia Tacos

Tilapia Tacos

1 egg

1 Tbsp. fat-free milk

1/2 tsp. green hot pepper sauce

1/2 cup cornmeal

2 Tbsp. all-purpose flour

1/4 tsp. ground cumin

1/4 tsp. freshly ground black pepper

4 (4 oz.) tilapia filets, cut lengthwise in half

4 tsp. olive oil

1 (15 oz.) can black beans

8 corn or flour tortillas, warmed

3 plum tomatoes, chopped

2 cups shredded cabbage

1/2 cup salsa

1/4 cup minced cilantro

1 medium lime, cut into wedges

Preheat oven to 375°.

In a small bowl, whisk egg, milk and pepper sauce. In another small bowl, mix cornmeal, flour, cumin and pepper. Dip tilapia in egg mixture, then in cornmeal mixture, patting to help the coating stick. Place on a baking sheet coated with cooking spray. Drizzle the tops of the tilapia with oil. Bake 15 to 20 minutes or until fish flakes easily with a fork.

Meanwhile, place beans in a small saucepan and heat through over medium-low heat, stirring occasionally. Serve tilapia on tortillas; top with beans, tomatoes, cabbage, salsa and cilantro. Serve with lime wedges.
