Stir It Up: Fresh Strawberry Bruschetta & Healthy Peanut Butter Pie

Fresh Strawberry Bruschetta 

20 medium sized, fresh strawberries

3 teaspoons sugar

1/2 cup cream cheese (may use low fat) softened

1/4 cup crumbles blue cheese

Whole grain ciabatta bread

Extra virgin olive oil 

Slice ciabatta bread and brush with olive oil. Toast under broiler until lightly browned on both sides. Thinly slice strawberries and mix with sugar, taste and adjust sweetness. Mix cream cheese with blue cheese, adding a little water or milk if needed to be spreadable. Top each toasted bread slice with cream cheese mixture and top with sweetened strawberries and serve immediately.

 

Healthy Peanut Butter Pie 

3 cups low fat frozen vanilla yogurt

1/2 cup natural creamy peanut butter

1/4 cup crushed peanuts or pretzels

1 chocolate piecrust 

Mix softened frozen yogurt with peanut butter and pretzels. Spread into pie curst and freeze until firm, about 3 hours. Garnish with peanut before serving.
