Great Groceries: Sausage with Ravioli

Sausage with Ravioli

2 large onions, sliced

3 cloves garlic, sliced

3/4 lb. bulk hot Italian-style sausage

3/4 cup chicken broth

2 (9 oz.) packages refrigerated cheese ravioli

1/2 lb. sliced mushrooms

2 medium tomatoes, chopped

1/2 tsp. salt

1/2 tsp. fennel seeds, crushed

1/4 tsp. freshly ground black pepper

4 cups spinach

1/4 cup Parmesan cheese

Cook ravioli according to package directions.

In a large skillet sauté onions and sausage until sausage is no longer pink. Add garlic and 1/4 cup broth and cook

2 minutes longer. Add mushrooms, 1/4 cup broth, tomatoes, salt, fennel and pepper to skillet; cook 5 minutes. Add remaining broth and arugula; cook 2 minutes. Stir in ravioli and top with Parmesan cheese.
