Great Groceries: Cheese-Stuffed Grilled Peppers

Cheese-Stuffed Grilled Peppers

1 cup ricotta cheese

1 (8 oz.) package cream cheese, softened

1/2 cup freshly grated Parmesan cheese

1/4 tsp. garlic powder

1/2 tsp. salt

1/4 tsp. freshly ground black peppers

8 Cubanelle peppers

2 Tbsp. olive oil

In a medium bowl, blend ricotta with cream cheese and Parmesan cheese. Add garlic powder, salt and pepper.

Light a grill or heat a grill pan to medium-high heat. Using a small, sharp knife, remove the stems from the peppers, reserving the tops. Cut around the inside the peppers to detatch the membranes and remove the seeds. Using a spoon, fill the peppers with the cheese mixture and reattach the tops. Rub peppers with olive oil.

Grill the peppers, turning occasionally, until blistered all over and the cheese is hot, about 7 minutes. Transfer peppers to a plate and serve.
