Great Groceries: Chicken Thighs with Spinach

Chicken Thighs with Spinach

6 boneless, skinless chicken thigh

1/2 tsp. seasoned salt

1/4 tsp. garlic powder

1/2 tsp. freshly ground black pepper

1 Tbsp. olive oil

4 shallots, minced

2 cloves garlic, minced

1/3 cup white wine

1 (10 oz.) package fresh spinach

1/4 tsp. salt

1/4 cup reduced fat sour cream

Sprinkle chicken with seasoned salt, garlic powder and pepper. In a large nonstick skillet, heat oil over medium heat. Add chicken; cook 6 minutes on each side or until a thermometer inserted in the center of the meat reads 170°. Remove from pan; keep warm.

In same pan, sauté shallots and garlic until tender. Add wine; bring to a boil. Cook until wine is reduced by half. Add spinach and salt; cook until spinach is wilted. Stir in sour cream; serve with chicken.
