Great Groceries: Cornbread Casserole

Cornbread Casserole

3/4 cup cornmeal

1 cup sour cream

1 (15 oz.) can creamed corn

1 (15 oz.) can whole kernel corn, drained

1/4 cup melted butter

2 eggs, beaten

1 tsp. salt

1/2 tsp. freshly ground black pepper

1 cup flour

3 tsp. baking powder

1/2 cup shredded Cheddar cheese

1/3 cup sugar

Preheat oven to 350º.

In a bowl, mix together cornmeal and sour cream; set aside. In another bowl, mix together, corn, butter, eggs, salt, pepper, flour, baking powder, cheese and sugar. Add cornmeal mixture to corn mixture. Pour into a 9 x 7-inch baking dish coated with nonstick cooking spray. Bake for 60 to 70 minutes.
