Great Groceries: Green Bean Casserole

Green Bean Casserole

This one is made in your slow cooker, freeing up space in your oven for the rest of your meal. We're also adding a few ingredients to enhance your usual recipe.

1 1/2 lbs. fresh or frozen thin green beans

1 (16 oz.) package sliced mushrooms

3 cloves garlic, minced

1 Tbsp. olive oil

1 (10.75 oz.) can condensed cream of mushroom soup

1 cup shredded smoked Gouda or Cheddar cheese

1/4 cup milk

2 Tbsp. Dijon mustard

1 cup chopped roasted red peppers

1/4 tsp. freshly ground black pepper

1 (2.8 oz.) can french-fried onions

In a large pot cook green beans in lightly salted boiling water for 3 minutes; drain.

In a large saucepan cook and stir mushrooms and garlic in hot oil over medium to medium-high heat until soft and beginning to brown. Stir in soup, cheese, milk and mustard until combined. Add green beans, red peppers and black pepper and mix well. Spoon half of the bean mixture into a large slow cooker. Top with half of the french-fried onions. Repeat layers. Cover and cook on low for 4 to 5 hours or on high for 2 to 2 1/2 hours.

* Message from Megan: You can make this up to 24 hours ahead of time. Prepare the ingredients, transfer to a bowl and refrigerate, stopping before putting it into the slow cooker.
