Stir It Up: Christmas Brunch

Christmas Brunch

4 cups frozen cubed (southern style) hash brown potatoes

1 pound bulk pork sausage

1/2 pound bacon

1 medium green pepper, diced

2 1/2 cups (8 ounces) shredded sharp cheddar cheese, divided

1 small onion, diced

1 cup biscuit mix

1/2 teaspoon salt

1/4 teaspoon cayenne pepper, optional

4 eggs

3 cups milk

1/2 cup sour cream 

Cook and drain the sausage add the diced green peppers and onions the last two minutes to cook lightly. Cook and crumble the bacon. In a large bowl, combine the hash browns, sausage, bacon, green pepper, 1 cup cheese and onion. Transfer to a greased 13 x 9 baking dish. In another bowl, whisk the biscuit mix, salt, cayenne pepper, sour cream, eggs and milk; pour over the top. Sprinkle with remaining cheese. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 375° for 40 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

 Easy Apple Dumplings

 2 cups sugar

2 cups water

1/2 teaspoon cinnamon

1/2 cup butter 

Preheat oven to 350 degrees. Mix sugar, water, and cinnamon together and bring to a boil in a medium saucepan. Boil for 5 minutes, remove form the heat and add the butter. Set aside. 

2 cups flour

2 teaspoons baking powder

1 teaspoon salt

1/2 cup shortening

1/4 cup butter

1/2 cup milk 

Sift the dry ingredients together. With a pastry blender, cut in shortening and butter. Mix in the milk. Roll dough out on a floured surface, making a rectangle 1/4 inch thick.  

5 peeled and grated apples

2/3 cup sugar

1 teaspoon cinnamon 

Sprinkle dough with the apples. Mix the cinnamon and sugar together and sprinkle over the apples. Roll dough and apples up starting at the long end. Cut into 1 inch pieces and place in 9 by 13 pan. Pour syrup over the dumplings and Bake in the preheated oven for 45 minutes.
