Great Groceries: Slow Cooker Meatloaf and Potatoes

Slow Cooker Meatloaf and Potatoes

Meatloaf and mashed potatoes in the slow cooker. No need for an oven here. Your entire meal will be done by the time you're home from work.

2 lbs. ground turkey

1 egg

1 onion, chopped

3/4 cup smashed cornflakes

1 envelope onion soup mix

1/4 cup Worcestershire sauce

1/2 tsp. salt

1/4 tsp. freshly ground black pepper

1/2 tsp. garlic powder

1/4 tsp. Italian seasoning

5 to 6 potatoes, washed

1/3 cup ketchup

In a large bowl, combine turkey, egg, onion, cornflakes, onion soup, Worcestershire, salt, pepper, garlic powder and Italian seasoning. Mix until well combined. Form into a loaf and transfer to a slow cooker sprayed with nonstick cooking spray.

Poke holes in potatoes and wrap individually with tin foil; arrange around the meatloaf. Cook on low for 8 to 10 hours, or until meatloaf is cooked through and potatoes are soft. In the last hour of cooking, spread ketchup overtop meatloaf. Unwrap potatoes and serve with meatloaf.
