Honey Pork Roast

This is a very different way of cooking a pork roast. The honey and Parmesan cheese make a great flavor combination.

1 (3 to 4 lbs.) boneless pork roast

2/3 cup grated Parmesan cheese

1/2 cup honey

4 Tbsp. soy sauce

1/2 cup water

1 Tbsp. dried basil

4 cloves garlic, minced

2 Tbsp. olive oil

1/2 tsp. salt

1/4 tsp. freshly ground black pepper

2 Tbsp. cornstarch

1/4 cup water

Spray slow cooker with non-stick cooking spray. Place roast in slow cooker.

In a small bowl, combine cheese, honey, soy sauce, water, basil, garlic, oil and salt; pour over pork. Cover and cook on low for 4 to 6 hours or until a meat thermometer reads 160°.

Remove meat to a serving platter and keep warm. Skim fat from cooking juices if needed and transfer to a small saucepan and bring to a boil. Combine cornstarch and 1/4 cup water until smooth. Cook and stir for 2 minutes or until thickened. Slice roast and serve with gravy.
