Great Groceries: Chicken with White Wine Sauce

Chicken with White Wine Sauce

Staying in for Valentine's Day? Make this for your sweetie. It's an elegant meal that is very simple.

2 Tbsp. flour

2 Tbsp. grated Parmesan cheese

1/4 tsp. garlic powder

1⁄2 tsp. salt

1⁄4 tsp. freshly ground black pepper

4 boneless, skinless chicken breasts

2 Tbsp. olive oil, divided

1 onion, diced

3 cloves garlic, minced

2 cups sliced mushrooms

1⁄2 tsp. basil

1/4 cup. dry white wine

2 Tbsp. water

In a shallow dish, combine flour, Parmesan cheese, garlic powder, salt and pepper. Dredge chicken in flour mixture, coating both sides and reserving any remaining flour mixture. In a large skillet, brown chicken in 1 tablespoon of olive oil, for 6 to 8 minutes on each side, until juices run clear. Remove from skillet and keep warm.

In the same skillet heat remaining oil over medium-high heat; add onions and garlic and sauté until onions are softened. Add mushrooms and basil and sauté until mushrooms are tender, about 5 minutes. Season with salt and pepper to taste. Stir in any reserved flour mixture; gradually add wine and water and bring mixture to a boil. Serve sauce with chicken immediately.
