Stir It Up: Shrimp and Spinach Pasta & Better Than Strawberry Short Cake

Shrimp and Spinach Pasta

8 ounces of linguine
2 tablespoons of extra virgin olive oil
6 tablespoons of butter , divided
2 teaspoons minced garlic
1 teaspoon crushed red pepper
1 1/2 pound large shrimp
salt and pepper
1 teaspoon dried oregano
1 bag baby spinach
1/2 cup parmesan cheese
1 tablespoon fresh lemon juice
extra cheese, optional

Cook pasta according to the package directions, drain and set aside.  Save about a 1/2 cup of the pasta water.  In that same deep pot, heat the olive oil and 2 tablespoons of the butter.  Add the garlic and crushed red pepper and cook just until you smell the garlic.  Add the shrimp and salt and pepper to taste.  Stir until the shrimp just start to turn pink and add the oregano and spinach and cook until the spinach is wilted.  Add the drained pasta back into the pot with the parmesan cheese and the rest of the butter.  When the shrimp are cooked through, add the lemon juice and a little pasta water and mix just once more before serving warm with more cheese.  

Better Than Strawberry Short Cake

1 quart Strawberries
1/4 to 1/2 cup sugar
Whipped Cream

 4 eggs
1 teaspoon vanilla
3/4 cup sugar
8 tablespoons butter
3/4 cup flour
2 cups milk
cinnamon, optional 
Powdered sugar

Quarter the strawberries and mix in the sugar.  The amount of sugar will depend on how sweet the berries are.  Set Aside

Preheat the oven to 325 degrees. Grease an 8 by 8 inch baking dish then line it with parchment paper that covers the bottom and up the sides.  You grease the pan first so that the parchment paper will “stick” to the sides better.    Separate the eggs into whites and yolks.  With an electric mixer, beat the egg whites until they are stiff.  Set Aside.  Beat the egg yolk with the sugar then add the softened butter and vanilla.  Beat until well mixed before adding the flour.  Mix until all ingredients are incorporated,then slowly add the milk while still mixing.  Gently fold in the stiff egg whites with a spatula; adding a little at a time.  It should look a little lumpy.  Pour the batter (it will seem thin) into the prepared dish, sprinkle with cinnamon and bake in the preheated oven for about 60 minutes or until he top is lightly golden.  It may seen a little wobbly in the center, but just a little.  Cool completely before dusting with powdered sugar.  Remove the cake from the pan by the using the parchment paper and cut into squares.  Top each square with the sweetened strawberries and a little whipped cream.  You can double this recipe and use a 13 by 9 inch pan, but you may have to reduce the baking time.
