Great Groceries: Balsamic Pork Loin Skillet

Balsamic Pork Loin Skillet

1 lb. pork tenderloin, sliced 1/2-inch thick 
1/4 cup balsamic vinegar
1/4 cup olive oil
1/2 tsp. smoked paprika 
1 Tbsp. honey 
2 cloves garlic, minced
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
1/4 tsp. oregano
3/4 cup sliced red onion
2 oz. sliced Kalamata olives
1 zucchini, thinly sliced
1/4 tsp. red pepper flakes
1/2 cup Feta cheese
Basil for garnish

Whisk together balsamic vinegar, olive oil, paprika, honey, garlic, salt, pepper and oregano. Add pork and mixture to a plastic resealable bag. Marinate for 30 minutes, up to overnight in refrigerator.

Heat skillet on medium. Sauté onion until fragrant. Add pork and sauce. Cook on medium for 5 minutes. Add olives, zucchini and red pepper flakes. Flip pork over and continue cooking for another 5 to 10 minutes, until pork is no longer pink.

Garnish pork and veggies with cheese and basil before serving.
