Great Groceries: Mediterranean Bowl

Mediterranean Bowl

1 (16 oz.) jar roasted red peppers, drained
1 clove garlic, minced
1/2 tsp. salt
2 Tbsp. fresh lemon juice
1/2 cup olive oil
1/2 cup almonds
1/2 cup quinoa
2 cups spinach
2 cups shredded cooked chicken
1/2 cup crumbled Feta cheese
1/2 cup Kalamata olives
1/4 cup red onion, thinly sliced
Hummus for serving


Pulse red peppers, garlic, salt, lemon juice, olive oil and almonds in food processor until smooth.

Cook quinoa according to package directions. Build bowls to your liking adding, quinoa, spinach, chicken, cheese, olives, red onion and hummus. Top bowls with red pepper sauce.

    A Youngstown church is helping local veterans this holiday season.  The first 288 turkey baskets will be given to local veterans in need. It's part of The Place where the Lord Provides Christian Center annual 500 turkey basket giveaway. Bishop Salina Covington, said, "I got specific instructions in prayer the Lord wanted me to open up for veterans.     20 years ago, a community campaign helped to secure GM Lordstown's future. Now a similar campaign called "Drive it Home" hopes to do the same.
