Great Groceries: Mediterranean Bowl

Mediterranean Bowl

1 (16 oz.) jar roasted red peppers, drained
1 clove garlic, minced
1/2 tsp. salt
2 Tbsp. fresh lemon juice
1/2 cup olive oil
1/2 cup almonds
1/2 cup quinoa
2 cups spinach
2 cups shredded cooked chicken
1/2 cup crumbled Feta cheese
1/2 cup Kalamata olives
1/4 cup red onion, thinly sliced
Hummus for serving


Pulse red peppers, garlic, salt, lemon juice, olive oil and almonds in food processor until smooth.

Cook quinoa according to package directions. Build bowls to your liking adding, quinoa, spinach, chicken, cheese, olives, red onion and hummus. Top bowls with red pepper sauce.
