Stir It Up: Black Beans and Rice, Hot Lenten Hummus & Old Fashion Brownies

Black Beans and Rice

1 tablespoon canola oil
4 teaspoons minced garlic
1 large red onion, diced
1 or 2 stalks of celery, diced
1 green or red bell pepper, diced
2 (1 pound) cans black beans (or red beans)
1 teaspoon onion powder
1 teaspoon salt
1/4 teaspoon pepper
1 to 2 tablespoons hot sauce
2 1/2 cups chicken or vegetable stock
1 cup white, saffron or brown rice
1 tablespoon butter
1 tablespoon cilantro leaves, minced
Heat the canola oil in a frying pan and sauté the diced onion with the celery until tender, adding the garlic for the last minute or so.  Stir in the beans, onion powder, salt, pepper, and hot sauce.  Reduce the heat to very low and allow the flavors to blend while you cook the rice.  Bring the chicken or vegetable stock to a boil and add the rice and butter, reducing the heat to low and continue to cook, covered for 20 minutes. When the rice is cooked, mix it into the beans gently and serve warm garnished with fresh cilantro.

 
Hot Lenten Hummus

1/4 cup lemon juice
1/2 teaspoon minced garlic
1/4 cup tahini
`Dash of ground cumin
1 tablespoon chipotle pepper, in adobo sauce
2 1/2 teaspoon salt
2 cups canned chickpeas, rinsed and drained
1/4 cup plain Greek yogurt
1/4 cup water
2 tablespoon extra virgin olive oil
1 cup sharp white cheddar, shredded
To serve: Corn chips, fresh veggies, and pita bread

In a blender combine the lemon juice, garlic, tahini, cumin, and chipotle and blend until smooth.  When smooth add the chickpeas, water, and extra virgin olive oil and blend.  Add the yogurt and give it a spin.  Pour into a serving bowl and drizzle with a little extra virgin olive oil and a little adobo sauce.  

Old Fashion Brownies

1/2 cup softened butter
1 cup sugar
1 (16 ounces) can Hershey chocolate syrup   (the 16-ounce size now comes in a squeeze pouch)
4 eggs
1 cup flour
1 cup chopped nuts (optional)
Lightly butter a 13 by 9-inch pan and preheat the oven to 350 degrees.  Beat the butter with the sugar then add the syrup, mix well.  Add the eggs one at a time beating well after each addition.  Slowly beat in the flour and fold in the nuts.  Pour into the prepared pan and bake in the preheated oven for 30 minutes.  Frost as soon as you take it out of the oven and allow to cool at room temperature.
Frosting:
1/2 cup butter
1 1/2 cup sugar
1/3 cup evaporated milk
1/2 cup chocolate chips, semi-sweet
In a saucepan combine butter, sugar and evaporated milk and bring to a boil and boil 2 minutes, stirring constantly.  Stir in the chocolate chips until they are melted.  Pour over brownies as soon as they are out of the oven and spread quickly.  Allow to cool until frosting sets. You should make the frosting the last five minutes that the cake is baking.  If you make it sooner, it will start to get firm before you spread it.  However, if that happens, you can just stir it over medium heat, and it will be ready to spread.
