Stir It Up: Apple-Cinnamon Popovers, Saucy Strawberries & Strawberry Short Pie

Apple-Cinnamon Popovers

3 large eggs
1 1/2 cup whole milk
1 1/2 cup flour
1 teaspoon salt
1/2 cup finely diced apple
3/4 cup sugar mixed with 2 teaspoons cinnamon
1/2 cup very sharp cheddar cheese, finely shredded
Preheat the oven to 450 degrees.  Place the muffin pan in the oven while it is preheating.  With a hand mixer, blend the eggs and milk until frothy, then slowly add the flour and salt and mix until there are only a few lumps.  Mix the apples with half of the cinnamon sugar.  Remove the muffin pan from the oven and lightly coat each well with cooking spray.  Fill each well about 3/4 full of the batter and top each with the apples and cheese.  Bake for 20 minutes at 450 degrees, then turn the oven down to 350 degrees and bake another 15 minutes.  Remove from the oven and turn the popovers out of the pan and toss with the remaining cinnamon sugar.  Serve! 

Saucy Strawberries

2 tablespoons strawberry preserves
1/4 cup sugar
1 tablespoon lemon juice
2 pounds hulled and halved strawberries
Heat preserved on the stove or in the microwave until runny and mix with sugar, lemon juice, and berries.  Let sit until juicy, at least 30 minutes.  

Strawberry Short Pie

2 pie crusts
2 tablespoons butter, melted
1 tablespoon sugar with 1/2 teaspoon cinnamon added
4 ounces hulled strawberries
1 (8 ounce) package cream cheese, softened
1/2 cup confectioners’ sugar
1/2 teaspoon lemon juice
1/2 teaspoon vanilla
4 cups saucy strawberries
Whipped cream
Preheat the oven to 425 degrees. Roll out pie crust and cut into about 7-inch rounds.  Brush each round with melted butter and sprinkle with cinnamon sugar.  Bake on parchment paper in the preheated oven about 8 to 10 minutes or until lightly browned.  With a hand mixer blend the strawberries with the softened cream cheese, confectioners’ sugar, lemon juice, and vanilla.  If the mixture becomes too soft or runny, put it in the refrigerator until firm enough to spread.  Spread the flavored cream cheese on the baked, cooled pie crust and put on a serving plate.  Top with the saucy strawberries and whipped cream and serve.
