Giant Eagle Recipe: Bacon Al Pastor Taco With Pineapple and Lime Slaw

Bacon Al Pastor Taco With Pineapple and Lime Slaw

Yields 8 tacos/Cook time 20 minutes

INGREDIENTS:

• 1 package Market District Smokehouse bacon, cut into thin matchstick size pieces

• 1 ½ cups fresh pineapple, medium diced

• 1 can Giant Eagle red enchilada sauce 

• 1 package Giant Eagle angel hair shredded green cabbage

• ½ red onion, thin sliced

• 1 bunch cilantro, rough chopped

• 2 limes, juice only

• 3 Tablespoons Market District olive oil

• ¼ teaspoon kosher salt

• Freshly ground black pepper to taste

• 1 pack Giant Eagle flour tortillas

DIRECTIONS:

In a large cast iron skillet, cook the bacon over medium heat until just beginning to crisp. Line a plate with two paper towels, carefully remove the bacon from the pan (leaving the bacon fat in the pan), and drain on the paper towels. Add the pineapple to the same pan and allow to caramelize over medium heat in the bacon fat. Once caramelized drain any excess grease, allow the pineapple to cool, and place the pineapple into a medium bowl with green cabbage, red onion, cilantro, lime juice, olive oil, salt, and pepper. Mix well and set aside.

Return the bacon back to the pan and add the enchilada sauce. Cook for about three minutes or until the enchilada sauce reduces and glazes the bacon. Briefly heat the tortillas in the microwave, then stuff with the bacon filling. Place the slaw on top and enjoy!
