Stir It Up: Nacho Friday

Nacho Friday

White Queso:
½ pound white American cheese
¼ cup milk
1 tablespoon butter
1 (4 ounce) can green chilies
¼ teaspoon garlic salt
Blend all ingredients together in a pot over warm heat until melted and smooth.

Toppings:
Thinly sliced jalapeno peppers
Diced avocado
Minced cilantro


Beef Nachos

1 pound ground beef
1 (10 ounce) can enchilada Sauce
1 (4 ounce) can green chilies
1 bag of tortilla chips
½ cup chopped cilantro
1 thinly sliced jalapeño pepper
Salsa – fresh or store bought

Cheese Sauce:
2 tablespoons butter
2 tablespoons flour
¾ cup hard cider
1/3 cup milk
2 cups shredded sharp cheddar cheese
1 teaspoon Dijon or regular mustard
Salt and pepper to taste if needed

Cook the ground beef in a skillet until browned.  Add the enchilada sauce and green chilies to the cooked meat and cook, on low, for about 8 minutes uncovered. 

 In another pot melt the butter and whisk in the flour first until well mixed with the butter then the cider and milk.  Whisk continually until all the liquid is incorporated and the sauce is not lumpy. Slowly stir in the cheese, mustard and chipotle chilies.  Taste the cheese sauce and add salt and pepper if needed. 

On a large platter layer the chips, meat and cheese sauce and top with cilantro, jalapeno slices and salsa.  

Elote Nachos

2 tablespoons butter
4 cups small sweet corn
2 tablespoons mayonnaise
1 tablespoon cornstarch
1 cup heavy whipping cream
8 ounces shredded Monterey jack cheese
1 bag tortilla chips
¼ cup cotija or feta cheese
2 tablespoon sour cream
2 tablespoon chopped cilantro
Cayenne pepper to taste  
Lime wedge

(If you can find Tajin seasoning, use this to top the nachos and you will not need the cayenne pepper and lime wedge.)

Melt the butter in a skillet and add the corn, charring it a little. In another pot mix the cornstarch and cream and bring it to a simmer add the cheese until it melts.  Place the nachos on a serving platter and pour on the cheese, top with the corn, the cotija, sour cream, cilantro, cayenne pepper and some lime juice.
