One Pot Pasta
Pasta and sauce that cook together in the same pot. Serve with crusty bread and salad.
1 lb. bulk sausage
12 oz. linguine pasta
1 (15 oz.) can fire roasted diced tomatoes
1 onion, chopped
4 cloves garlic, minced
1/4 tsp. red pepper flakes
2 tsp. Italian seasoning
4 1/2 cups chicken broth
2 Tbsp. extra virgin olive oil
1/4 cup chopped fresh basil
Parmesan cheese for garnish
Brown sausage in a large pot until cooked through, drain grease if necessary. Place pasta, tomatoes, onion and garlic in a large stock pot; pour in broth. Sprinkle on top the pepper flakes and Italian seasoning. Drizzle top with oil.
Cover and bring to a boil. Reduce to a low simmer, keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated.
Season to taste with salt, pepper and basil. Serve with Parmesan cheese.
