Mini Meatloaf Two Ways

1 1/2 lb. ground beef
1/3 cup bread crumbs
1/3 cup chopped onion
1/3 cup milk
1 egg, beaten
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. freshly ground black pepper

Italian Meatloaf
1/4 cup chopped mushrooms
1/4 cup pasta sauce
2 Tbsp. chopped fresh basil
Parmesan cheese

Greek Meatloaf 
2 Tbsp. chopped Kalamata olives
1/4 tsp. dried oregano
1/2 cup Feta cheese


Preheat oven to 350°.

In a large bowl, combine ground beef, bread crumbs, onion, milk, egg, garlic, salt and pepper. Divide mixture into two separate bowls. 

Italian Meatloaf
Add mushrooms, pasta sauce and basil to meat mixture. Divide mixture into 6 muffin tin cups, patting lightly to level. Bake 22 to 24 minutes. Top with Parmesan and serve with extra pasta sauce.

Greek Meatloaf
Add olives and oregano to meat mixture. Divide mixture into 6 muffin tin cups. Bake 22 to 24 minutes. Top with Feta cheese and serve with tzatziki sauce.
