Watermelon Cupcakes
Cupcakes
1 (15.25 oz.) box vanilla cake mix
1 cup water
1/3 cup vegetable oil
3 large eggs
Light green food coloring
Frosting
2 sticks butter, softened
3 cups powdered sugar
1/2 tsp. powdered watermelon Kool-Aid mix
Red food coloring
Mini chocolate chips
Preheat oven to 350° for glass plans or 325° for dark or coated pans.
Cupcakes
In a large bowl, blend cake mix, water, oil and eggs at low speed until moistened, about 30 seconds. Beat at medium speed for 2 minutes, until smooth. Stir in a few drops of green food coloring.
Divide batter evenly among a 12-cupcake tin, lined with cupcake liners. Bake for 15-20 minutes. Remove from oven and let cool completely.
Frosting
In a large bowl, beat butter until smooth. With a spatula, slowly stir in powdered sugar, then beat until smooth. Mix in Kool-Aid powder and 1 to 2 drops of red food coloring. Pipe frosting onto cupcakes and top with chocolate chips.
