Southern Macaroni Salad

1 lb. macaroni
1 1/2 cups mayonnaise
3 Tbsp. apple cider vinegar
1 Tbsp. sugar
1 Tbsp. hot sauce
1 clove garlic, minced
1/2 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
1 (12 oz.) jar roasted red peppers, drained and chopped
1 cup finely chopped kale
6 slices bacon, cooked and crumbled
1/2 cup sweet pickle relish
1/2 cup chopped green onions

In a large pot, cook macaroni according to package instructions. Drain, rinse with cold water and transfer to a large bowl.

In a medium bowl, combine mayonnaise, apple cider vinegar, sugar, hot sauce, garlic, garlic powder, salt and pepper. Pour dressing over macaroni.

Add roasted red peppers, kale, bacon, relish and green onions. Toss well to coat. Refrigerate until ready to serve.
