Chicken & Stuffing Bake

1 box stuffing mix

1 1/2 cups cooked and shredded chicken

1 onion, diced

2 ribs celery, diced

1 carrot, grated

1 cup broccoli florets, steamed

1/4 tsp. salt

1/2 tsp. freshly ground black pepper

1 (10.5 oz.) can cream of chicken

3/4 cup chicken broth

1/2 cup shredded Cheddar cheese

Preheat oven to 400°.

In a large bowl, combine stuffing mix, chicken, onion, celery, shredded carrot, broccoli, salt and pepper. Transfer to a greased 9 x 13-inch baking dish.

In a medium bowl, combine cream of chicken and chicken broth. Pour over stuffing mixture and cover with foil. Bake 30 minutes. Remove from oven, stir mixture and top with cheese. Bake, uncovered, for another 15 minutes.
