Thai Peanut Chicken Slaw Salad

1/2 cup peanut butter
2 Tbsp. soy sauce
1/2 Tbsp. minced ginger
1 clove garlic, minced
2 Tbsp. rice vinegar
1/2 tsp. Sriracha sauce
1/2 tsp. maple syrup
1/3 cup water
4 cups coleslaw mix
1 cup shredded carrots
1/2 cup chopped green onion
1/2 cup chopped red bell pepper
1 seedless cucumber, chopped
1/3 cup chopped cilantro
1 1/2 cups shredded chicken
1/2 cup chopped peanuts


In a small bowl, whisk together peanut butter, soy sauce, ginger, garlic, rice vinegar, Sriracha and maple syrup. Slowly whisk in water until desired consistency is reached. Set aside.

In a large bowl, toss together coleslaw mix, carrots, green onion, bell pepper, cucumber, cilantro and chicken. Pour peanut sauce overtop and toss to coat. Top with chopped peanuts and serve.
