Cheese-Stuffed Turkey Meatloaf

Glaze Topping
2 Tbsp. ketchup
1 tsp. brown sugar
2 tsp. Dijon mustard
2 tsp. Worcestershire sauce 
1/2 tsp. hot sauce

2 lbs. lean ground turkey
1 shallot, minced
3/4 cup chopped mushrooms
3/4 cup seasoned breadcrumbs
1/4 cup ketchup
2 eggs
1/2 tsp. salt
1 1/2 cups shredded Cheddar cheese
1 cup chopped spinach

Preheat oven to 350°.

In a small bowl, mix together ketchup, brown sugar, mustard, Worcestershire and hot sauce. Set aside.

In a large bowl, add ground turkey, shallot, mushrooms, breadcrumbs, ketchup, egg and salt. Mix until well combined. Transfer to a 12 x 16-inch piece of parchment paper and spread into a flat rectangle.

Sprinkle cheese and spinach evenly over meatloaf. Roll up jelly roll-style and seal ends. Place seam-side down in a 9 x 13-inch baking dish sprayed with nonstick cooking spray. Bake for 45 minutes.

Remove from oven, brush with glaze mixture and cook for an additional 10 to 15 minutes.
