Shrimp Linguini

1 pound linguine

1 cup chopped or thinly sliced red pepper

1 cup chopped or thinly sliced green pepper

1/2 cup finely chopped sweet onion

3 teaspoons minced garlic

1/4 teaspoon salt

1/4 teaspoon dried oregano

1/8 to 1/4 teaspoon crushed red pepper flakes

1/8 teaspoon pepper

1/4 cup extra virgin olive oil

2 pounds peeled and deveined cooked shrimp (61-70 per pound)

1/2 to 1 cup shredded Parmesan cheese

Cook the linguine according to package directions, drain and keep warm. In a large skillet sauté the peppers, onion, garlic, and seasonings in oil until vegetables are tender.  Add the shrimp at the very end to heat them but not overcook them.  Toss the warm cooked linguine with the shrimp mixture.  Taste and adjust the seasoning and serve topped with a sprinkle of cheese.
