Green Bean Potato Casserole

1 onion, chopped

3 potatoes, peeled, cooked and mashed

10.5 oz. green beans, cooked

2 eggs

1/3 cup grated Parmesan cheese

1/2 tsp. Italian seasoning

1/2 tsp. salt

1/2 tsp. freshly ground black pepper

1/4 cup bread crumbs

2 Tbsp. butter, cubed

Preheat oven to 350°.

In a medium pan over medium heat, cook onion until soft. Transfer to a large bowl. Add mashed potatoes and green beans.

In a small bowl, combine eggs, cheese, Italian seasoning, salt and pepper. Pour overtop bean mixture and toss to combine. Transfer to a baking dish sprayed with non-stick cooking spray. Top evenly with bread crumbs and butter. Bake about 20 to 25 minutes.
