Cheesy Mushroom Beef Rice

1 1/2 cups instant rice, uncooked

1 lb. ground beef

1 onion, diced

1/2 tsp. garlic powder

8 oz. sliced white mushrooms

1 (10.5 oz.) can cream of mushroom condensed soup

1 cup milk

6 slices bacon, cooked and

   crumbled

1/2 tsp. salt

1/2 tsp. freshly ground black pepper

1 1/2 cups shredded Swiss cheese, divided

Cook rice according to package instructions. Set aside.

In a large skillet over medium heat, add ground beef, onion and garlic powder. Cook until almost done. Drain grease and return to heat. Add mushrooms and cook about 3 minutes.

Reduce heat to medium-low. Add cream of mushroom soup, milk, bacon crumbles, cooked rice, salt and pepper. Stir to combine and let simmer 8 minutes.

Stir in 1 cup of Swiss cheese, then top with remaining 1/2 cup. Allow the cheese to melt on top before serving.
