Eggplant Pizza Bites

1 eggplant, cut into 1/4-inch slices
1 Tbsp. salt
3 cloves garlic, minced
1 Tbsp. olive oil
1 tsp. Italian seasoning
1 cup pizza sauce
1 cup shredded Mozzarella cheese
Your favorite pizza toppings

Preheat oven to 400°.

Lay eggplant slices on paper towels. Sprinkle with salt and let sit for 10 to 15 minutes. Wipe dry.

In a small bowl, combine garlic, oil and Italian seasoning. Brush garlic mixture onto both sides of eggplant slices and bake for 15 minutes.

Remove from oven and flip. Top each slice with
1 tablespoon pizza sauce, a sprinkle of cheese and your favorite pizza toppings. Bake for another 10 minutes, until cheese is melted.
