Shrimp Cakes

Shrimp Cakes
1 lb. raw shrimp, deveined, peeled and minced
2 eggs
1/2 onion, finely minced
1 clove garlic, minced
1 Tbsp. mayonnaise
3 Tbsp. cornstarch
2 Tbsp. chopped green onion
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
1/8 tsp. cayenne pepper
1/2 tsp. Old Bay seasoning
3 Tbsp. olive oil 

Lemon Aioli
3/4 cup mayonnaise
2 cloves garlic, minced
1 tsp. lemon zest
1 Tbsp. lemon juice

Shrimp Cakes
In a large bowl, combine minced shrimp, eggs, onion, garlic, mayonnaise, cornstarch, green onion, salt, pepper, cayenne and Old Bay seasoning.

Heat oil in a large skillet over medium heat. Shape
2 tablespoons shrimp mixture into a cake and place in pan. Continue with remaining mixture, until pan is full. Cook 2 to 3 minutes, flip, then cook for an additional 2 minutes. Transfer to a plate lined with paper towels. Serve warm with lemon aioli. 

Lemon Aioli
In a small bowl, stir together mayonnaise, garlic, lemon zest and lemon juice. Stir in salt and pepper to taste, then serve.
