Sweet and Sour Pork Skewers

Sweet and Sour Sauce
1/2 cup pineapple juice
1/4 cup rice vinegar
2 Tbsp. ketchup
2 tsp. Sriracha sauce
1 Tbsp. soy sauce
3 Tbsp. sugar
2 tsp. cornstarch 

1 1/2 lbs. pork tenderloin, cubed
1 pineapple, peeled, cored and cubed
1 Tbsp. olive oil
1/2 tsp. seasoned salt
1/2 tsp. freshly ground black pepper

Sweet and Sour Sauce
In a small pot over medium-high heat, combine
pineapple juice, rice vinegar, ketchup, Sriracha and soy sauce. Bring to simmer.

In a small bowl, whisk together sugar and cornstarch until combined. Add to pot and whisk well. Simmer
3 to 4 minutes, until sauce thickens. Set aside.

Preheat grill to medium-high heat.

Alternately place pork and pineapple on skewers until all skewers are assembled. Brush each skewer with olive oil and season pork with seasoned salt and pepper.

Place skewers on grill and cook about 4 minutes per side. Remove from grill and immediately brush with sweet and sour sauce. Serve with remaining sauce.
