Sloppy Joe Grilled Cheese Casserole

1 lb. ground beef

1 onion, diced

1 (15 oz.) can sloppy joe sauce

1 stick butter, softened

12 slices bread, cut in half

2 1/2 cups shredded Cheddar cheese, divided

 Preheat oven to 400°.

In a large pan over medium-high heat, cook ground beef with onion until fully cooked. Drain grease and return to low heat. Stir in sloppy joe sauce and let simmer until thickened.

Butter one side of each slice of bread. Place half of the slices, butter side down, in the bottom of a 9 x 13-inch baking dish sprayed with nonstick cooking spray.

Top with 2 cups cheese, meat mixture, remaining 1/2 cup cheese and remaining slices of bread, butter side up. Bake about 26 to 30 minutes.
