Apple Pork Loin

1 (32 oz.) package sauerkraut, undrained

1 apple, cored and cut into thin wedges

1/2 cup chopped onion

2 Tbsp. brown sugar

2 Tbsp. maple syrup

1 tsp. caraway seeds

1 (3 lb.) boneless pork loin roast

1/2 tsp. salt

1/2 tsp. freshly ground black pepper

2 Tbsp. butter

Preheat oven to 350°.

In a large bowl, combine sauerkraut, apples, onion, brown sugar, syrup and caraway seeds. Set aside.

Season pork loin with salt and pepper. In an ovenproof saucepan or Dutch oven over medium heat, add butter and let melt. Add pork roast and sear on each side, until browned.

Add sauerkraut mixture to pan and cover. Bake

1 1/2 to 2 hours or until pork reaches an internal temperature of 155°.
