Great Groceries: Cheeseburger Soup

Cheeseburger Soup

1 lb. ground beef

3/4 cup chopped onion

1/2 cup shredded carrots

3/4 cup diced celery

1 tsp. dried basil

1 tsp. dried parsley flakes

3 cups chicken broth

4 cups peeled and diced potatoes

3 Tbsp. butter

1/4 cup all-purpose flour

16 oz. Velveeta® cheese

1 1/2 cups milk

3/4 tsp. salt

1/2 tsp. freshly ground black pepper

1/4 cup sour cream

In a saucepan, brown ground beef , onion, shredded carrots, parsley, basil and celery. Sauté until tender. Add broth and potatoes and bring to a boil. Reduce heat, cover and simmer 10 to 12 minutes or until potatoes are tender.

In a small skillet melt butter and add the flour. Cook and stir for 1 to 2 minutes. Add to soup mixture and bring to a boil. Cook and stir for 2 minutes reduce heat to low.

Stir in cheese, milk, salt and pepper. Cook and stir until cheese melts. Remove from heat and blend in sour cream.
