Stir It Up: Italian Pasta Salad

Italian Pasta Salad 

2 pounds spiral pasta, cooked

4 cups green pepper, chopped

4 cups chopped seeded, Roma tomatoes

3 cups chopped sweet onion

1 can garbanzo beans, rinsed and drained

1 pound salami, cut julienned

1 pound pepperoni, cut julienned

1/2 pound provolone cheese, cubed

1/2 cup small balls of mozzarella cheese, each ball cut in half

1 cup black olives, halved 


1 cup red wine vinegar

1/2 cup sugar

2 tablespoon dried oregano

2 teaspoon salt

1 teaspoon pepper

1 1/2 cup extra virgin olive oil 

Mix all salad dressing ingredients together, whisking well or pulsing in a food processor. Cook pasta according to package directions, drain and rinse with cold water. Make sure you salt the pasta water before cooking. Mix cold pasta with pepper, tomatoes, onions, beans, salami, pepperoni, olives and cheese. Pour dressing over all and mix well. Refrigerate at least 3 hours or overnight. Mix well before serving.
