Great Groceries: Buffalo Chicken Quinoa

Buffalo Chicken Quinoa

1 cup quinoa

2 cups water

6 Tbsp. butter, melted

1/2 cup hot sauce

3/4 lb. boneless skinless chicken breasts, cut into bite-size pieces

2 cloves garlic, minced

1 cup broccoli florets

3/4 cup shredded carrots

3/4 cup shredded cabbage

1/2 cup blue cheese crumbles, plus more for garnish

4 green onions chopped

In a fine-mesh strainer, rinse quinoa well and drain. In a medium pot, combine quinoa and water. Bring to a boil, then cover and turn heat to low. Cook until water is absorbed, about 20 minutes. Remove from heat and fluff with a fork.

Meanwhile, in a small bowl, combine butter and hot sauce. Set aside.

Sauté chicken in a large skillet for about 5 minutes or until cooked through, add garlic and cook 1 minute more. Add 1/4 cup or so of the buffalo sauce and cook until the chicken absorbs the sauce. Add broccoli, carrots and cabbage to skillet for 2 to 3 minutes, just until they start to soften. Add vegetable mixture to cooked quinoa, add blue cheese and green onions. Top with remaining dressing.
