Homemade Stuffing with Roasted Chestnuts, Peaches and Sundried Cherries

1 large onion chopped fine

5 ribs celery chopped fine

2# butter

Sautee Onion, Celery and butter until translucent

Combine the above with 4 loaves Italian Bread cubed

5 Cups Chicken Stock

3 Cups Roasted Chestnuts

3 Cups Peaches

1 1/2C Sundried Cherries

1/2C Brown Sugar

2TBLS Sage

2TBLS Poultry Seasoning

1tsp pepper

Baked on 325 Degrees for approximately 1 hour.

Homemade Cranberry Sauce with Orange Zest

4 bags Fresh Cranberries

5 Cups Sugar

4 Cups Fresh Squeezed Orange Juice

Zest from above 4 Orange

6 Cups No Concentrate Orange Juice

3 Packs Red Jello

4 Cups Water

Combine cranberries, sugar, Fresh Orange Juice, Zest, Orange Juice and Water in Pot and cook over medium heat for approximately 1 hour until cranberries are broken down. Add Jell-O to pot after approx. 45 min of cooking and mix well.

Once cooled refrigerate for 2 hours.
