Great Groceries: Twice Baked Potatoes

Twice Baked Potatoes

4 large baking potatoes

1 cup sour cream

1/2 cup milk

4 Tbsp. butter

1/2 tsp. salt

1/2 tsp. freshly ground black pepper

4 oz. cream cheese, softened

1 cup shredded Cheddar cheese, divided

1/2 cup chopped green onions

8 slices bacon, cooked and crumbled

Preheat oven to 350º.

Bake potatoes for 1 hour. When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop inside into a large bowl; leaving about 1/8-inch of potato next to the skin. Add sour cream, milk, butter, salt, pepper, cream cheese, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon mixture into the potato skins. Top each with remaining cheese, green onions and bacon. Bake for another 15 minutes.
