Cooking with Ross Sciana: Baked Stuffed Boneless Chicken Breast

Baked Stuffed Boneless Chicken Breast

6-8 8 oz. chicken breasts

1 loaf of Italian bread

4 eggs

Salt and pepper to taste

2 tablespoons of wet chicken base

2 medium onions

6 whole pieces of celery

1 tablespoon poultry seasoning

¾ qt. of water

1 lb. unsalted butter

½ cup chopped parsley

Chop celery and onion med fine, sauté in 1 lb. of unsalted butter let mixture cool, mix all mixtures together blend well, stuff chicken breast, fill with stuffing and bake in a 350 degree oven mix 1 qt. of water and 2 tablespoons of chicken base, pour in the bottom of the baking dish and cook approx. 1 hour.

Serve with char grilled asparagus and oven roasted Yukon gold potatoes.

Gravy

Add strained drippings to chicken base in 1 qt. of water to 2 teaspoons of chicken base, mix well and bring to boil while whisking to slow boil.
