Great Groceries: Stir Fried Chicken and Broccoli

Stir Fried Chicken and Broccoli

You won't be calling for takeout again after trying this recipe.

1 lb. boneless skinless chicken breasts, cut into 1-inch pieces

3 cloves garlic, minced

2 tsp. finely chopped ginger

1 cup chicken broth, divided

4 Tbsp. soy sauce

2 tsp. sugar

2 cups broccoli florets

1/2 cup chopped green onion

1 cup sliced mushrooms

2 tsp. cornstarch

In a large skillet or Wok, sauté chicken in oil until browned. Add garlic and ginger; cook 1 minute more. Add 3/4 cup broth, soy sauce and sugar. Cover and cook over medium heat 5 minutes. Add broccoli, onion and mushrooms; cover and cook about 5 minutes more, stirring occasionally, until chicken is no longer pink and broccoli crisp-tender.

In a small bowl, mix cornstarch with remaining broth; stir into chicken mixture. Cook, stirring frequently, until sauce is thickened.
