Grilled Cheese

1/2 cup ricotta cheese

2 Tsp. olive oil

1/4 tsp. garlic powder

1 tsp. dried basil

1/4 tsp. dried oregano

1/4 tsp. salt

1/4 tsp. freshly ground black pepper

1/4 cup shredded Parmesan cheese

4 slices mozzarella cheese

8 slices white bread

1 large clove garlic, peeled and halved

2 Tbsp. butter

In a small bowl, mix together ricotta, olive oil, garlic powder, basil, oregano, salt and black pepper. Refrigerate for at least an hour.

Spread ricotta mixture evenly on each piece of bread. Lay mozzarella slices evenly on every other piece of bread. Sprinkle with Parmesan cheese and close the sandwiches.

Rub the outsides of the sandwiches with the cut side of the garlic clove, then butter both sides. In a large frying pan over medium-low heat, cook the sandwiches, until golden and the cheese is melted.
