Pork – Recipe #1

2- 10 oz. pork cutlets char grilled

½ cup sundried tomatoes

2 cup spinach

1 cup portabella mushrooms

½ cup artichoke hearts

1 table spoon fresh garlic

¾ cup white wine

¼ tea spoon sea salt

¼ tea spoon black pepper

¼ cup fresh basil 1/3 cup EVOO

Wrap pork chops with saran wrap, beat with mallet till ¼ inch thick, remove saran wrap, and then grill pork culets approximately 3 minutes on each side in a sauté pan. Add garlic, EVOO, sea salt and pepper, till garlic is golden brown. Add portabella mushrooms, artichoke hearts and spinach. Sauté till spinach has wilted. Add sundried tomatoes, wine and bring to boil, remove from heat. Spoon mixture over char grilled pork chop then serve.

Pork – Recipe #2

2-10 oz. center cut pork chops

1 cup of mushrooms

1/8 cup of EVOO

1 teaspoon garlic

½ cup of heavy cream

1/8 cup Marsala wine

1 teaspoon wet beef base

1/8 cup pepper

1 cup vegetable oil

Wrap pork chops in saran wrap beat with a mallet till ¼ in. Thick, remove saran wrap.


1 cup bread crumbs

¼ teaspoon salt

¼ teaspoon pepper

2 eggs

1 cup of whole milk

½ cup of flour

Sautee garlic till golden brown with EVOO. Add mushrooms, wet beef base to pan, mix well, add pepper, stir in heavy cream and Marsala wine, let broil 5 minutes. Pan fry pork cutlets in vegetable oil till golden brown; approximately 3 minutes on each side on medium heat. Put pork cutlets on dish, add Marsala sauce on top of pork cutlets and serve.
