Great Groceries: Pecan Rosemary Baked Tilapia

Pecan Rosemary Baked Tilapia

Try this light and fresh recipe with a side salad or broccoli.

1/3 cup chopped toasted pecans

1/3 cup panko bread crumbs

2 tsp. chopped fresh rosemary

1/2 tsp. brown sugar

1/8 tsp. garlic powder

1/4 tsp. salt

1/8 tsp. cayenne pepper

2 tsp. olive oil

1 egg white

4 (4 oz.) tilapia fillets

Preheat oven to 400º.

In a shallow dish, mix pecans, breadcrumbs, rosemary, brown sugar, garlic powder, salt, cayenne pepper and olive oil.

In a separate shallow dish, whisk egg white. Dip fish in the egg white and then the pecan mixture, lightly coating each side. Place fillets on a baking sheet coated with nonstick cooking spray. Sprinkle the remaining pecan mixture on top of the tilapia fillets. Bake for about 10 minutes or until fish flakes easily with a fork.
