Stir It Up: Cola Chops, Panna Cotta and Mocha Sauce

Cola Chops

canola oil 
1 cup ketchup
1 cup cola
2 tablespoons brown sugar
1 teaspoon corn starch
8 pork chops
salt and pepper
rice or pasta

Mix the ketchup, brown sugar, corn starch and cola and allow to sit to thicken while getting the pork chops ready.  Dredge the pork chops in seasoned flour and brown in the canola oil.  Place in a  baking dish and pour the cola mixture over the pork chops.  Season with a little salt and pepper.  Bake, uncovered in a 375 degree oven for 30 minutes to an hour, depending upon the thickness of the chops.  Serve with rice or pasta pouring the extra sauce over the all.   

Panna Cotta

1 cup whole, blanched almonds
2/3 cup sugar
1 envelope unflavored gelatin
2 cups whipping cream
1/2 cup milk
dash of salt

Put almond in a food processor and  process until ground into a smooth butter.  In a saucepan mix sugar and gelatin.  Add the whipping cream and heat over medium heat, stirring until gelatin is dissolved.   Stir in the almond butter, milk and salt.  Pour into six custard dishes and cover with plastic wrap and refrigerate until set, about 6 hours.  Serve with mocha sauce.

Mocha Sauce

4 ounces semi-sweet chocolate chips
2/3 cup whipping cream
1/4 cup sugar
1 teaspoon instant coffee

Mix all ingredients in a saucepan and stir over medium heat until mixture just start to boil around the edges.  Remove from the heat and allow to cool before serving.  Store, covered in the refrigerator.
