Great Groceries: Easy Easter Ham with Roasted Pineapple

Easy Easter Ham with Roasted Pineapple

8 lb. spiral-cut bone-in or boneless ham     
1 1/4 cups brown sugar, divided
1/2 cup maple syrup
2 cups pineapple juice
4 cups fresh pineapple chunks
4 Tbsp. butter, melted
1/8 tsp. salt
1/2 tsp. cinnamon
1/8 tsp. ground cloves


Place ham in a slow cooker, flat side down. Rub 1 cup brown sugar over ham. Then pour maple syrup and pineapple juice overtop. Cover and cook on low heat for 4 to 5 hours. Baste ham with juices an hour before serving. When cooking is done, carefully remove ham and let rest for 15 minutes before carving.

Preheat oven to 450º.

In a medium bowl, combine pineapple chunks, butter, salt, cinnamon, ground cloves and remaining brown sugar. Mix well to coat pineapple. Pour pineapple mixture onto a large baking dish. Bake for 20 to 25 minutes, stirring about half way through. Serve roasted pineapple with sliced cooked ham.
