Great Groceries: Make-Ahead Breakfast Sandwiches

Make-Ahead Breakfast Sandwiches

6 eggs
1/2 tsp. salt, divided
1/2 tsp. freshly ground black pepper, divided
6 English muffins, split in half
12 slices ham or Canadian bacon, divided
6 slices Cheddar or American cheese, divided


Preheat oven to 375°.

Crack eggs into a muffin tin sprayed with nonstick cooking spray. Beat each egg slightly and season with salt and pepper. Cook about 12 to 14 minutes.

Place one egg onto each muffin bottom. Top each with 2 slices ham and 1 slice cheese. Top with other muffin half. Wrap each sandwich tightly with plastic wrap and place in freezer.

To reheat, remove plastic wrap from sandwich and wrap in a paper towel. Heat in microwave for 1 to 2 minutes, until heated through completely.
