Great Groceries: Shrimp Fajitas

Shrimp Fajitas

1 1/2 cups diced avocado

1/2 cup sour cream

1/4 cup chopped cilantro

1 tsp. chopped jalapeno pepper

1 Tbsp. lime juice

1 lb. raw shrimp, peeled and deveined

2 Tbsp. olive oil, divided

1/8 tsp. chili powder

1/8 tsp. cumin

1 onion, halved and sliced

1 green pepper, seeded and cut into strips

1 red pepper, seeded and cut into strips

2 cloves garlic, minced

8 flour tortillas, warmed

1/2 cup salsa

In a food processor, combine avocado, sour cream, cilantro, jalapeno and lime juice until smooth. Season with salt and pepper to taste.

In a large bowl, mix shrimp, 1 Tablespoon olive oil, chili powder and cumin; marinate for 15 minutes.

Meanwhile, in a large skillet, sauté peppers and onions in remaining olive oil until crisp-tender. Add garlic and cook 30 seconds more. Remove from skillet.

In the same skillet, add shrimp and cook until pink. Add peppers and onions back to skillet and heat through. Serve on tortillas with avocado sour cream and salsa.
