Carrot Cake Oatmeal

3/4 cup almond milk, original or unsweetened
1/2 cup nonfat plain Greek yogurt
1/2 cup grated carrot
1/4 tsp. salt
1 tsp. cinnamon, divided
1/2 tsp. apple pie spice
2 Tbsp. baking stevia
1 1/4 cup old-fashioned oats
2 tsp. chia seeds
2 Tbsp. pecans, chopped
2 Tbsp. maple syrup

In a small bowl, mix almond milk, yogurt, carrot, salt, 1/2 teaspoon cinnamon, apple pie spice, stevia, oats and chia seeds. Divide between 2 small cups or jars. Cover and refrigerate overnight, or at least one hour. 

Before serving, top with pecans, remaining cinnamon and syrup. Serve cold or microwave for 40 seconds to warm.
